Claire Saffitz Makes Chocolate Chip Cookies | Dessert Person
What makes the best chocolate chip cookies? In Claire’s opinion, it’s a chewy edge, soft and chewy center, puddles of chocolate (in this case, dark and milk), a healthy amount of salt, and, crucially, lots of butterscotch-y flavor from the interplay of vanilla, brown sugar, and brown butter. That might sound like a lot, but it all comes together easily in a couple of bowls, no stand mixer required. The hardest part is definitely waiting for the dough to chill in the fridge before baking.



Chocolate Chip Cookies
2 sticks unsalted butter (8 oz / 227g), cut into tablespoons
2 tablespoons heavy cream, half-and-half, or whole milk (1 oz / 28g)
2 cups all-purpose flour (9.2 oz / 260g)
2 teaspoons Diamond Crystal kosher salt (0.22 oz / 6g)
1 teaspoon baking soda (0.21 oz / 6g)
3/4 cup packed dark brown sugar (5.3 oz / 150g)
3/4 cup granulated sugar (5.3 oz / 150g)
2 large eggs (3.5 oz / 100g), cold from the refrigerator
1 tablespoon vanilla extract
5 ounces (142g) bittersweet chocolate disks, half coarsely chopped
5 ounces (142g) milk chocolate disks, half coarsely chopped

  • Can anybody who has made these help real quick? I made them and they’re ere still delicious, but they didn’t spread. I followed the recipe to the best of my ability but I’m not sure exactly where I went wrong, they ended up like little domes of goodness rather than actual cookies 😂 What should I do different so that they actually spread when they bake?

  • I triad recreate this recipie but butter and cream didn't mix well. I think it will be better if you gave us more precise information fe. time of browning butter. I never did it so I don't know if my butter is burned or not. You didn't show how your butter looks like before you pour it into bowl. If we should cool butter and cream before we start to prepare cookies please tell us in the begining. Jst tell us that the process have two phases and we need to know that it will take more time then we think.

  • These cookies are great. I know I made some mistakes (I've never browned butter before, and the consistency didn't end up the same as hers), but they still tasted amazing and everyone loved them. Definitely wait the two days. I tried one on each day, and the two-day ones were easily the best. Great recipe, requires some finagling if you're a novice like me, but doable and completely worth it :)

    • @Ada H okay, thanks!- I will try that next time. I have an unbaked batch in the freezer. I think it could also be that I made them too small so the cooking temp was too high for them, or maybe my oven just sucks which is a possibility -,(“_”),- it never bakes stuff evenly haha

    • @The Person I personally just made this recipe 2 days ago and mine spread perfectly fine and made quite big cookies so I'm not sure why urs is not working. When I first made them I baked a few right away to test if letting them sit in the fridge makes a huge difference and with the ones I baked right away spread way too much. Maybe let ur dough get to room temp and bake it and see if that makes a difference

  • Has anyone also had the same problem as me: I place the chilled or freezed dough on the baking sheet and put it in the oven. after a few minutes they spread uncontrollably and around the edges they get VERY thin and burn. they never stay round. I've done everything exactly as claire, and i mean EXACTLY the same. I've done them 3 times now and they were always the same. they taste delicious but damn are they ugly and i always have to cut away burnt pieces

  • Made these today! They were great but I personally found it to be still a bit too sweet even after reducing the total sugar by 100g and using dark and semisweet chocolate. Instead of 18 cookies, I got about 13 cookies. Replace cream with milk too. Would reduce the sugar by half and make the cookies smaller next time.

  • Have you ever tried adding dry milk powder to the butter on the stove? We brown it, strain it, and keep it in the fridge. It adds the flavor of speculoos cookies to things. It doesn't work in everything (whipped cream, cheesecake) because of the gritty texture, but it works in rice krispie treats or crusts made of crushed cookies.

  • I am making this again now. I found a lighter shade of shugar, but I am not 100% sure that it's the correct kind. Now, you're going to say "How hard is it to find brown shugar". It's fairly difficult, cause my country hasn't really made it to the cooking level that the States have. So I have this brown bag of shugar, but it doesn't look dry. It looks quite moist, but not as packed as I see Claire's to be. I'll keep everyone posted.
